Summertime Frozen Lemonade Pie

When we were growing up our  mother would make these pies during the summertime in all kinds of different flavors! We had forgotten all about these pies until we came across a post mentioning them over at the fantastic blog, I Heart Naptime! Since summer is right around the corner, and this weekend is Memorial Day weekend, we thought it was a good time to make one up! Alison's Irish Oatmeal & Honey Bread


Alison's Irish Oatmeal & Honey Bread

3 cups FLOUR
1-1/4 cup QUICK COOK OATMEAL
1-1/2 tablespoons BAKING POWDER
1 tablespoon SALT
1 EGG
1-1/2 cup MILK
1/2 cup HONEY
1 teaspoon VANILLA
1 tablespoon BUTTER (to melt on top after bread has baked)

Preheat oven to 350 degrees, generously grease a 9x5x13 loaf pan. In a large bowl, combine flour, oatmeal, baking powder and salt, stir to blend. In a medium bowl beat egg and milk together. Beat in honey, add vanilla. Pour into flour mixture all at once. Stir with a wooden spoon just until dry ingredients are moistened, mixture will appear lumpy. Spread batter into prepared pan. Bake 1 hour and 15 min. or until loaf tests done and top is lightly brown. Brush top with butter and let cool.

This bread tastes great toasted and spread with butter and a drizzle of honey.

LUCKY SHAMROCKS

St. Patrick's Day Treats!

Who doesn't LOVE rice crispy treats! To celebrate St.Patrick's Day, I  thought it would be fun to turn them into lucky shamrocks!


Following the recipe on the box I changed the butter called for to coconut oil. This is something I keep in the house and use frequently in baking, on my dry cuticles and even on a baby's dry scalp! Amazing stuff! Never tried it in crispy treats, until.........

I read on the blog, How Does She?, where coconut oil was substituted for the butter, and knew the next time I made crispy treats, that's what I would do too.


I used neon green food coloring I had on hand, and, unfortunately, not a very nice green at all. So, after I spread them into the pan, I had to try and do something quick to pretty them up! I took the little squeeze bottle of dye and dropped little drops over the the setting crispy treats, thinking the dye might spread some.  (What was I thinking), no, it didn't! And I didn't like that so much either.

 So, I realized these would just have to do, and I continued with my plan of using a shamrock cookie cutter to cut the crispy treats into shamrock shapes.

All the while I kept in mind that although they were not so esthetically pleasing to the eye, the taste buds sure liked them!
The coconut oil really added a great flavor to the recipe! 

So here they are!!! The Lucky Shamrocks!!!

Gluten Free:Lasagna

Italian Style Gluten Free Lasagna
I spotted this gluten free pasta at my neighborhood grocery outlet store for $1.99!!! For gluten free pasta it is a bargain!
So I bought it and decided to share my Italian Style recipe with you.

Things you will need:
Pasta Gluten Free this or any brand.
1 small onion diced (any type onion)
3 or more gloves of garlic minced (I use a lot of garlic, we are Italian!)
2 29oz. cans of tomato sauce or homemade if you have some handy (adjust amount accordingly)
Italian Seasoning (I don't measure this other than to say I make my hand into a little cup and eye ball it -sorry)
1-2 pounds lean ground beef or ground turkey
2 cups of shredded cheese Italian blend( parm and mozz )or other to your taste, and more if you prefer.
1/2 pound fresh mozzarella sliced and cut into fourths (this takes the place of ricotta cheese for me)
1 cup additional cheese of your choice for topping casserole.
Salt to taste
Pepper to taste
Casserole dish
To Make The Sauce :
Brown ground beef or turkey and onion in stock pot over medium heat. Add garlic,sauce,Italian seasoning, salt, pepper and let simmer for about 20-25 minutes. Adjust seasoning if needed. Your house is going to have the smells of Italy rafting through it!
To Make The Pasta:
Using a stock pot fill with the amount of water called for on your pasta box/package. Bring to a rolling boil and add 1-2 tablespoons of olive oil and 1 teaspoon of salt to season the pasta.
Cook for the suggested amount of time.When cooked drain and set aside to cool.
To Assemble Lasagna:
Preheat oven to 350.
Layer 1-11/2 cups of sauce on bottom of casserole dish. Begin layering process:pasta,sauce,shredded cheese, fresh mozzarella. Continue until you have several layers.Top with additional cheese, cover loosely with foil and bake 25-30 minutes, uncover and bake 5 more minutes. Let rest 10-15 minutes. Serve with a green salad and some gluten free bread and wait for the compliments to start!

Green Smoothie

                        Healthy Green "Shamrock" Smoothie


Looks can be deceiving!

In honor of the quickly approaching St. Patrick's Day, I thought I would share with you my recipe for a healthy raw food green smoothie. A food is considered raw if "uncooked" or prepared below 116F, above this foods start to loose essential nutrients. We are by no means "experts" in this field, only concerned about trying to live a healthy lifestyle which in turn may:increase energy levels (all for that), give a youthful radiance to the complexion (yeah!), decrease number of doctor visits(you got my attention now) and aide in weight loss(sign me up!). In all seriousness,  we have found it to be true for us that if we change what we are putting into our bodies there are noticeable differences in how we feel. So if you are looking for something other than the green beer this year, why not give it a try, you just might like it and decide to make it your everyday drink!

Simple Healthy Raw Ingredients:
  1-2 leaves of curly Kale (we remove leaves from stem as we use a blender, don't have a Vit-a-mix, to blend the drink)

Fresh Italian Parsley (break off as much as you would like, more or less)

Fresh Mint (take off as many leaves as you like, we love mint so I use quite a few)

Fresh Ginger (peel and grate as much to your taste as you like)

One Apple (skin on and roughly sliced or whole if using a Vit-A-Mix)

6-8 cups of water (we use filtered, ice cold water from the fridge)

Note: It is always best when possible to use organic products.

Place all ingredients in blender/Vit-A-Mix and blend until smooth. If too thick, add additional water. Now for the best part!! The health benefits!!!!

Kale :rich in calcium,lutein,iron,Vitamins A,C and K. High in fiber.Seven times the beta carotene of broccoli and ten times more lutein. (Health facts by Dr. Linda Posh)
Italian Parsley: rich in Vitamins A,C, minerals,iron and calcium. (Health facts from USDA Release 18 2005)
Mint: aside from the beautiful fragrance and great taste it is know to settle nervous stomachs and slow the growth of harmful bacteria and fungi.(Health facts from A2Z of Health , Beauty and Fitness)
Apple: "an apple a day keeps the doctor away" phytonutrients regulate blood sugar. Fiber, antioxidant.(Health facts George Mateljan Foundation)
