Spanish Mother's day cards

As the number of Hispanic mothers in the United States continues to grow, so does the desire to celebrate and recognize these women for all they do.

Mother's Day is the third-largest card-sending holiday in the United States but ranks as the number one card-sending season for Hispanics, even higher than Christmas and Valentine’s Day.

Arlette Torres, editorial director for Sinceramente Hallmark who was born in Mexico, explains the importance of mothers to Hispanic consumers.

"Mothers are beloved, deeply respected, revered figures in the Hispanic community,” she says. “Her children view her as the source of goodness and love, affection, warmth and forgiveness. She is the idealized female figure, unequaled by other women.”

According to the most recent U.S. Census, the size of the Hispanic population is estimated at 41.3 million, making up 14 percent of the U.S. total. The Hispanic segment is growing three times faster than the general population of the U.S. and accounts for almost one half of the U.S. population growth. One in seven people in the U.S. is Hispanic.

To meet the needs of people who want to recognize this growing number of Hispanic moms, Sinceramente Hallmark offers 300 Mother’s Day cards. Many of the captions and formats are unique. Several designs feature the image of the Virgin of Guadalupe, who is beloved by many in Mexico.

Appetizers or Spanish Tapas: Make this Spanish tapa at the last minute, just as the guests arrive, so that they are piping hot. Make sure that you give your guests lots of paper napkins, so they can clean their fingers instead of licking them! This recipe is quick and easy and will not take longer than 20 minutes.

* Shrimp in Garlic – Gambas al Ajillo

Tortilla Espanola, Tortilla de Patata, or in English Spanish or Potato Omelet is truly the national dish of Spain, made with fried potatoes, onions and eggs. Make the tortilla, a few hours ahead and let it rest. Then, cut into small squares and serve it with slices of fresh baguette. If you prefer, learn How to Make Tortilla Espanola with a Step-by-Step, complete with photos. A tortilla takes only about 35-40 minutes total preparation and cooking time and is not difficult.

First Course - Fresh Green Salad: Spanish make simple, fresh green salads that refresh the palette. The reason is probably because a simple green salad complements the other Spanish dishes, which are so flavorful. With this recipe, you’ll need Romaine or Iceburg lettuce, tomatoes and sliced red or yellow onions. This is another dish that you can prepare ahead of time and dress it when you place it on the table.

Main Course - Roast Suckling Pig:

Suckling pig, roasted until it is so tender that a plate can cut through it! Since sows give birth in the spring, this is the time of year that it should be easier to find. Talk to your butcher and ask him if he can order one. If you cannot find a suckling pig, use a pork roast. Since this may take a couple hours to roast, you can do the preparations and start the roast before guests arrive, so you can relax!

Side Dish - Potatoes a la Importancia: This “important” potatoes are bathed in a rich sauce, full of finely chopped onions, a bit of saffron and are sure to be a big hit at the table and will go well with a tender roast. The best part is that you can make them in the morning and refrigerate them. Then, put the pan on the stove to warm them up.

Dessert - Rioja Wine Sorbet: Yum! If your mom likes red wine and has never tried a wine sorbet, try this one! It is super easy to make and should be made at day ahead of time and frozen. In fact, you can make this recipe a week prior to serving. Be careful because once you try it, you may not have any left when the big day arrives!
